Eggs Florentine
The vegetarian Bennie: poached eggs on wilted baby spinach with a hint of nutmeg, on a toasted muffin, drowned in hollandaise. Lighter than the meaty version and arguably better for it.

The Method

Make the hollandaise as in the Eggs Benedict recipe — blender method, drizzle the hot butter in slowly. Keep warm over a bowl of hot water.

Bring a wide saucepan of water to a bare simmer for poaching. Add the white vinegar.

In a frypan, melt the butter over medium heat. Add the smashed garlic and cook 30 seconds — don't brown it. Tip in the spinach in handfuls, tossing as it wilts. Two minutes total. Pull out the garlic. Season with nutmeg, salt, and pepper. Tip into a sieve to drain.

Poach the eggs as in the Benedict — 3 minutes for runny yolks. Lift onto kitchen paper.

Toast and butter the muffins. Pile the spinach on, sit the eggs on top, hollandaise across, dust of cayenne. Serve immediately.
