Apple and oat bircher muesli

The original overnight oats, soaked the proper Swiss way: oats, grated apple, lemon, yoghurt, and a few sultanas. Soft, tart, fresh — the morning's done before you're awake.

The Method

    In a bowl, combine the oats and milk. Stir, cover, and refrigerate overnight (at least 4 hours) so the oats soften and the mix loosens.

    Just before serving, grate the apple over the bowl, immediately tossing with the lemon juice so it doesn't brown.

  3. 3

    Stir in the sultanas, yoghurt, and honey. Spoon into bowls and finish with the walnuts.
