Toast the rye to deeply golden — rye benefits from a longer toast than white bread.

While the toast is going, toast the pumpkin seeds in a dry pan over medium heat for 90 seconds, shaking, until they pop and smell nutty.

Halve the avocado. Scoop into a bowl, add lemon juice, salt, and pepper, and mash chunky.

Pile the avocado onto the toast. Scatter pumpkin seeds and chilli flakes. Finish with a thread of olive oil.
