The Method

    Mash the banana to a smooth purée in a bowl. Whisk in the eggs and salt. Stir through the oats and let sit for 2 minutes — the oats hydrate and the batter thickens.

    Heat a non-stick pan over medium-low. Wipe with a little butter.

  3. 3

    Drop heaped tablespoons into the pan — the batter is loose, give them room. Cook for 90 seconds until the underside is set and golden, then flip carefully and cook another 60 seconds.

    Stack on a warm plate. Top with blueberries and a drizzle of maple syrup or honey.
