The Method

    Heat the grill (broiler) to high. Warm the beans in a small saucepan over low heat — don't boil them, just bring them up.

    Toast the bread lightly under the grill, 60-90 seconds a side.

  3. 3

    Butter the toast, spoon the warm beans on top, then bury under the grated cheese.

  4. 4

    Slide back under the grill for 90 seconds until the cheese is bubbling and going amber at the edges. Crack of pepper, eat immediately.
