French toast with banana and golden syrup
Eggy bread, Kiwi-style: thick-cut bread soaked through, fried in butter, topped with caramelised banana and a slick of golden syrup. The weekend-morning breakfast for kids and grown-ups.

The Method

Whisk eggs, milk, sugar, vanilla, cinnamon, and salt in a wide shallow bowl until smooth.

Soak each slice of bread for 20-30 seconds a side — the custard should saturate the slice without making it fall apart.

Melt half the butter in a wide frypan over medium-low heat. Cook the bread 2 minutes a side until golden and just set. Plate up.

Add the rest of the butter to the pan and turn the heat up. Lay in the banana slices, dust with extra sugar if you like, and cook 1 minute a side until they catch and caramelise.

Top the toast with the bananas. Drizzle generously with golden syrup. Serve hot.
