Honey-toasted granola

Big crunchy clusters of oats, almonds, and coconut, toasted with honey and a touch of olive oil until deeply golden. Three weeks in a jar. Twice the granola, half the price of supermarket.

The Method

    Heat the oven to 150°C fan-forced. Line two large baking trays with paper.

    In a big bowl, mix the oats, almonds, walnuts, seeds, coconut, cinnamon, and salt.

    Warm the honey, oil, and vanilla in a small saucepan over low heat just until pourable — about 60 seconds.

    Pour the wet over the dry. Toss thoroughly until every flake is glossy.

    Spread evenly across the two trays — don't crowd, you want surface area.

    Bake 25-30 minutes, swapping trays and stirring at 15 minutes, until deeply golden but not burning. Watch the last 5 minutes carefully — coconut catches fast.

    Cool completely on the trays. The granola crisps as it cools. Stir through the dried fruit. Decant into airtight jars.
