Smashed peas on toast with poached egg

A bright, springy alternative to avo toast: thawed peas smashed with mint, lemon, and parmesan, on sourdough, with a poached egg on top. Looks fancy, costs nothing.

The Method

    Bring a small saucepan of water to a bare simmer. Add the vinegar.

    While the water heats, smash the peas in a bowl with a fork — chunky, not paste. Stir in the mint, lemon juice and zest, parmesan, olive oil, salt, and pepper.

    Toast the sourdough deeply golden.

    Crack the egg into a small cup. Slide it gently into the simmering water. Cook 3 minutes for a runny yolk, 4 for set. Lift out with a slotted spoon onto kitchen paper.

    Pile the smashed peas onto the toast. Sit the egg on top, season generously, finish with a thread of olive oil.
