Soft-boiled eggs with Marmite soldiers
The kitchen-table breakfast every Kiwi knows: a soft-boiled egg in a cup, buttered toast cut into fingers smeared with Marmite, dipped one by one through the runny yolk. Childhood, properly.

The Method

Bring a small saucepan of water to a rolling boil. Lower the eggs in carefully on a spoon. Set a timer for 6 minutes for a runny yolk and just-set white.

While the eggs cook, toast the bread, butter generously, and spread a thin smear of Marmite on each slice.

Cut each slice into 4 long fingers — these are the soldiers.

When the timer goes, lift the eggs out and sit each in an egg cup (or a shot glass). Slice the top off with a sharp knife. Pinch of salt and pepper.

Dip the soldiers through the yolk. Eat immediately, before the yolk sets.
