Spinach and feta egg wrap
A wholemeal wrap, two eggs scrambled with baby spinach, crumbled feta, and lemon. Roll, cut, eat in the car. 25g of protein and you're out the door.

The Method

Whisk the eggs in a bowl with a pinch of salt and pepper. Stir through the lemon zest.

Melt the butter in a small frypan over medium-low heat. Add the spinach and toss for 30 seconds until just wilted.

Pour in the eggs. Stir gently with a spatula, pulling cooked egg toward the centre, until soft curds form (about 90 seconds). Don't overcook — they'll set in the wrap.

Warm the wrap in a dry pan or microwave for 15 seconds. Lay the eggs along one side, scatter the feta, roll up tightly. Slice on the diagonal.
